Any one ever had Collard greens, picked fresh just after the first frost and cooked with pork for seasoning. Served in a small bowl with onion and vinegar. It's a true Southern treat that must be tasted to appreciated.

Now I'm homesick for the past and the garden that my family raised vegetables in. Potatoes, corn, tomatoes, string beans, onions, and more. We also had apple, pear, and cherry trees. Farmers markets are real real nice things to have around.

And, Smokey, I love collard greens, though I use tabasco or another hot sauce instead of vinegar.

One of my favorite "easy meals" is roast beef and mashed potatoes with some fresh beans on the side. Just put the roast in a covered roaster with 1/2 cup of low salt chicken stock (or veal stock and/or red wine f you want to get fancy, or water if you're lazy; I always have a box of lo-salt chicken stock on hand, so that's what I use), add some Lowerys seasoned salt, and cook it until it falls apart. Serve with ground horseradish. Mix flour or corn starch with cold water in equal parts, add to the liquid and heat to bubbling to thicken the liquid for gravy for the potatoes or just a bit of melted butter if you don't want to do the gravy thing.

Oregano and/or thyme and/or mushrooms, can add a bit of different flavor to the beef/gravy, but none are necessary. Only the "falling apart" part is.

Also, I'm a gravy man too, but I don't enjoy it in the quantities that I did growing up. My parents were NC country and we ate country. So I say this, enjoy it when you have it, because time changes many things in our lives and sometimes you don't know what you've got until it's gone.

Ever try baking smoked pork chops in Cream of Mushroom Soup. šŸ˜Ž [cheers]

Spot on Wade, but here's another option. My Father liked this. Get a resealable glass jar and fill it with hot peppers and vinegar. Close the jar and let it alone for a few months to give the peppers and vinegar a chance to season each other.

Hehe....foodie snobs call this "infusing" the vinegar....and then pay $15 bucks for a 10 oz bottle that they use once every six months. ROFL ROFL

True, but I never heard of cheese curds until just a few years ago. My point is that some food is not familiar in distant parts of the US. Example: I've never had Seal meat or Hawaiian Poy.

Thread title is favorite foods. People put mainly their favorite meal.

So if I could have any meal for dinner tomorrow it would be ...

- Sausage and tomato pizza (light cheese) from infusinoes pizza on washington ave in racine, WI
along with a big jug of freshly squeezed OJ along with a bowl of berries (ras/blue/black).

That would be my perfect meal ... at least for tomorrow.

I really miss good pizza living in london.

Thread title is favorite foods. People put mainly their favorite meal.

Make it a special meal and have a Pizza Party. Ice down a couple of cases of beer and put on a video of a Packer game. Wear your best GB jersey and have balloons and decorations. Real Pizza and beer will blow those limes away.

Right now I'm going to enjoy my footlong Meatball and Cheese Sub, crack open an ice cold beer and enjoy my dinner before the Patriots play the Steelers tonight.

If I have my choice of any meal, it would be stuffed chicken spaghetti

Chicken breasts pounded flat and stuffed with cheese. Spaghetti sauce with lots of seasonings and angel hair noodles.


I could live on this forever.

Many years ago, I was feeling ambitious, so I decided that I would make Lasagna.
I purchased all the best cheeses and meats along with the pasta and Marinara sauce. I prepared everything per the recipe on the Muller's Lasagna box. All was layered into a very large baking dish, but I had more than enough so I added another smaller baking dish and made two. I baked it correctly and served it to my guest and I with fresh Italian Bread (and butter) , small salads, and a good Burgundy Wine.

It was a lot of work, but it was fantastic. I starting to feel ambitious again !
