Or do they know how to butcher it. I have no respect for all these Cabela hunters that drop the beast off at the local butcher shop. Grow a set and get your hands bloody, boys.
But as for the Elk meat - it is good, but I prefer the backstraps and tenderloins from the average 2 or 3 year old whitetail. The problem with downing the trophy buck is that you get trophy meat too.
