If the Cowboys have scouts who have actually bothered to watch the Packers' CBs, I cannot imagine them accepting someone like a Bush or Lee for Barber.

Warhawk stated something in another thread I totally agree with: while B-Jack may not be a RB with the same skill set as Grant, he probably allows the Packers to have greater options than they ever had with Grant starting.
Somewhere in his heart of hearts, I think Mike McCarthy is smiling at the chance to have B-Jack start. You can use Jackson like you did Grant - to run the ball - but now you also have Jackson as an added threat in the check-down department and someone who is an actual threat as a receiver out of the backfield.
McCarthy no doubt likes the added versatility that Jackson allows him. No doubt our depth at RB got hurt with Grant's injury, but we do not need a starting caliber RB to replace him.
