So what are your favorite cheeses?

Mine:

I think if a doctor said I had to give up cheese or die within months, I'd tell him "fuck you," order a couple thousand bucks or so worth of cheeses from all over the world, and treat everyone to the greatest cheese party ever held. And I'd keep re-ordering new cheeses until either they revoked my Amex card or I died from a cheese overdose, whichever came first.

I only recall one cheese I didn't like (Testun al Barolo -- ironically, at 30 bucks a pound, maybe the most expensive cheese I've ever bought). Anyway, here's today's top 5.

5. Big chunk of Velveeta melted on a grilled burger.
4. Aged gouda. With the sparkles in it. Far different from regular gouda.
3. Fresh cheese curds.
2. A really nice blue cheese on crusty bread. Stilton is my favorite blue, but it doesnt taste as good here in the states as it does in the UK....probably some effect of regulation; imported brie sucks too.)
1. Extra extra extra sharp cheddar. If you can cut a slice less than a 3/4" think, it isn't old enough. Gotta be chunky, not slicey. 5 years aging or more.

Fuck. Now I gotta log on to iGourmet and spend some money I don't have.

When I was in Germany, I made a tortelloni dish with gorgonzola fresh from Italy (more mold than milk) and shredded Emmentaler. Coupled with some decent (read: cheap) red wine, it was an orgasmic experience.

Someone shut that cultured dick up, eh? WTF was he saying? lol

Anyway, As I was somewhat 'raised' in WI, I'm partial to dill flavored cheese curds. Otherwise, just plain ol' sharp cheddar (fresh from a local cheese factory, not a name brand you get at your local supermarket).

Gruyere - Just fantastic if you're a fan of swiss cheese.
Manchego - Great for appetizers with wine
Gouda - Makes the best grilled cheese sandwiches. Gouda + prosciutto + jam = unbelievable.
Sharp cheddar - Who doesn't like it?

Squeaky cheese curds are awesome too.

my mom, who's italian, used to eat limburger late at nite with her dad. not sure if i could do that but i do enjoy a certain tang to my cheese!

Manchego, with Spanish ham is excellent

atleast 8 year sharp cheddar, switzerland swiss cheese (also called Gruyre), and romano for grilled cheese.. mmmmm
oh and also the finnish cheese, Oltermanni its extremely good, but kind of expensive for me to get
