Carimi would be pretty awesome - I hoped he'd come out last year, because he was slated to be available near the Pack's pick if that was the case (@ least in some early mocks I saw). I think the Outland probably put him out of reach for the Pack, though, especially if they man up and whomp on the Bears Sunday (and I expect that they will), putting them in the playoffs.
However, I agree that the depth emerging in other key areas (back seven on defense, TE, RB) this season is going to make it easier for Thompson to use a high-round pick on an OL prospect come April. The question is whether or not there'll be someone there worth that kind of a pick.
