I knew this before, but I don't think it has entirely to do with that one fact. It has a lot to do with experience reading sentences and knowing what should grammatically follow the last word.

For instance, reading a bunch of random words that are misspelled in the same fashion would be harder. Still insane though.

There is an amazing amount of redundancy built into any language. The book Chaos: Making a New Science by James Gleick, published in 1987, had a section about this topic.

In my study of Hebrew, it doesn't exist as it did when the old testament was written, and there were no vowels in the original language. translators only added the vowels several hundred years ago to aid modern readers. it seems really hard to understand how they could follow the language without vowels, but there was an exercise that was similar to this. it had a paragraph in english with all the vowels removed. it was easy to read it, because when a person understands the language, we don't need vowels. same thing with the hebrew. it was interesting.

Speaking of vowels, for the longest time when I was a kid, I thought when people said "bowels" they were saying "vowels." So I did a Beavis and Butt-head in English class a little bit too much.
