Statistics show the impact of COVID on healthy young people is minimal. The Belicheck side of me says that forcing potential immunity by exposing all your players now could provide a key advantage during the season if it occurs.

1) While in the minority, some young people, especially with underlining conditions do have more problems. Which include
Von Miller and I'm sure a number of NFL players have some underlying conditions. So while most would be completely fine, a couple of players per team could have more serious problems. And if just one single one died (unlikely but possible).
2) NFL players are doing a hell lot more than normal daily activities, as they're putting stress on their bodies and lung. Von Miller seemed to suggest the lungs were a major issue.
3) Recent research suggest the antibodies which give the "immunity" after recovering from a minor case of Coronavirus, might only last 3 months on average, as unfortunately they're not sticking around by themselves. Which the season is longer than that, plus recovery time from the illness and certain players assuming they're immune forever, and that could just be asking for more cases come playoff push time.
But yeah, I've had similar thoughts, and surprised that some players aren't doing the blood transfer from someone with anti-bodies, to put it in their system, which some have suggested helps. Athletes have done odder things such as taken blood out, to give it some sort of treatment and out back in.
