I think people are confusing the read option with QB's who are able to scramble when they need (or want) to.

Since some read-option elements made it into the NFL, every play-action (out of the shotgun) is called a read-option play, all of a sudden.
The last couple of drives of the game, the Seahawks used little to none of their vaunted read-option offense. They did, however, hand it off out of the shotgun quite a bit and Wilson will always take off when he has the chance.
Mobility is not an offensive gameplan or type. Mobility is just something a quarterback has. And QBs like Wilson and RGIII are just very adept at using that mobility to their advantage.
