If he's willing to play interior DL then he could be a great addition, but usually edge rushers usually fight from becoming full-time interior DL guys, as it's a lot more dirty work, with a hell lot less flash.

But maybe we could rotate Griffen, Z. And Gary in with the DTs.

I don't object to signing Griffen. He would be a solid asset. I see him mainly lining up in pass rush situations.
Rotating him in with other linemen would keep him fresh for the whole game.
Having him stand up with Z, Preston, Gary and having Clark with his hand in the dirt then having 6 dbs in coverage would be mind boggling.
Can you see the confusion if One of the pass rushers hesitate for a second before coming? The OL will probably look away to help chip someone else allowing access to the qb.
I don't see Griffen going back to MN. He opted out of his contract. Why go back? Why would MN pay him more?
